The 2008 vintage was very mild until a heat wave in March and after picking, the grapes were chilled before whole bunch pressing. Very low extraction rates, brief cold settling (as Michael says, ‘grape solids are good, squeaky clean wine is boring!’), wild yeast barrel ferment (French barriques, 20% new), and 11 months on yeast lees.
Amicus Reserve Shiraz£24.95
